The Art of Cooking For One

Someone should teach a class on this. How in the world am I expected to cook for ONE PERSON when I usually cook for four (yes, there are only two of us when my husband is home but he eats enough for two, three on a good day)!?

I know there's always the easy-peasy solution of buying prepackaged meals but that is just not my shtick! I've become a big fan lately of what I like to call "scrambled mess"; two scrambled eggs mixed with whatever is in my fridge that isn't a) expired or b) pickles. Tonight I had Mexican "scrambled mess" which included two scrambled eggs, sauteed onions, bell pepper, and mushrooms as well as a chipotle in adobo, salsa, and Mexican shredded cheese. I never had the knack for omelets so this is my substitute!

I gotta tell you though, I'm getting sick of eggs. So I'm asking for pointers. What do you cook when it's just you at home?

  1. I like leftovers, so I tend to make more and then eat it for a few days:) Or I'll freeze some of it for when I don't feel like cooking. It's hard to cook just for one!

  3. I never figured out how to cook for one. I just continued the way I always did and ate lots of leftovers. It was just easier for me. I didn't have to relearn to cook for 2 (or 6 lol) once he got home.

  4. It's been a long time since it was just me because we now have 3 children. But back in the day, I would cook my recipe as usual and then freeze the leftovers in individual servings to create healthy frozen dinners. We also lived on base, so 4 of us set up a cooking club and would take turns cooking dinner and feeding the other lonely wives. It was good company and we each got 3 evenings off from having to figure out what to cook and the inevitable clean up.

  5. Just remembered quesadillas - perfect when cooking for one. I would also grill or broil some meat, slice it and freeze it in 1/4 cup servings - perfect for adding to a salad for one.

  6. It seems like we're all a little perplexed at this! Leftovers I've tried as well! For example, making a batch of stuffed peppers then freezing them in ziploc baggies to defrost and warm up later.
    Alea, I love the idea of the cooking club! A few girlfriends and I have been taking turns cooking and that's really helped.

  7. On the first and second deployments I ate pretty healthy, but it does get tiring coming up with ideas for just one. I would bake chicken with some italian salad dressing on it. It would always come out very moist and tasty. That was probably my go to meal.

    I'm finding it even harder now with little children because I'm almost still cooking for one b/c they don't eat much, but they are picky about texture and looks so that narrows it down even further.
